Banana and chia seed pancakes

Here is my pancake recipe that my daughter and I have for breakfast at least 3-4 times a week. It is so easy and also makes for a good snack when you are out and about. 

Ingredients:

  • ½ C arrowroot or tapioca flour

  • 1 egg

  • 1 banana

  • 1 tsp chia seeds

  • 1 tsp hemp seeds. Can totally be made without these if you don’t have any

  • 1 Tbsp tahini. You could also use a nut butter like almond butter 

  • Pinch of baking powder. I’ll be totally honest I don't always put this in

Method:

  1. Heat up a pan with butter or coconut oil

  2. Put all ingredients in a blender and mix until a batter forms. You could also mix by hand but honestly I just can't be bothered 

  3. Pour onto the hot pan. I usually make 6 of them but this is your show you could make 2 big ones if you wanted

  4. Serve with coconut yoghurt or topping of choice
